Bacon-Wrapped Mushroom Jalapeno Poppers Recipe
Who doesn’t love cheese and peppers wrapped up with bacon? We add mushrooms for fun but they can be made without mushrooms; the proportions might be a little bit off. This recipe for poppers is a little easier than stuffing whole peppers, dredging, then deep-frying. You don't have to worry about the mess of deep frying, and they still get a nice crispy outside that's made of bacon! Eat them shortly after they come out of the oven, while they’re still warm. They’re okay cold but they’re much better warm. Don’t get too stressed! This is a food for fun occasions. Make sure you line your baking pan for easy cleanup. Makes 10 or 12 pieces. Equipment: • skillet (for mushroom duxelles) • sheet pan (lined w/ parchment) • medium to large mixing bowl Ingredients: 5-6 ea jalapeno peppers 5-6 oz cream cheese use more if omitting mushrooms 1 Tbsp feta 15g 1 Tbsp Parmesan 15g 1 Tbsp onion powder 4 oz mushrooms minced and reduces to duxelles 1 ea shallot 1 Tbsp butter 1 pack bacon regular pack of supermarket bacon ~350g to taste salt and pepper Procedure: 1. Preheat the oven to 425F. 2. Place skillet over medium-high heat with butter. 3. Mince mushrooms and shallot. 4. Place mushrooms and shallot into skillet and saute until the mushrooms and shallot have been reduced almost to a paste. 5. Meanwhile, in the mixing bowl, combine the cheeses and the onion powder. 6. Split open the jalapenos and remove the membranes and seeds; whatever membrane and seed material is left behind will increase the spiciness of the finished popper. 7. Once the mushrooms are finished, add them to the cheese mixture and mix thoroughly. 8. Spoon the mixture into the jalapeno halves, being careful not to mound it up. 9. Wrap the filled jalapeno halves with a strip of bacon each. 10. Place the wrapped jalapeno halves onto the baking pan and place them in the center of the oven for about 20-25 minutes, turning halfway through. 11. Serve immediately and enjoy fresh!
